    Wines with bright future by recovering a forgotten history of the viticulture of Castilla La Mancha

    Its fragility was probably the trigger for abandonment in the vineyard; however a good viticulture work, the warm climate with exposure of the clusters and its late maturation give the possibility of making  generous  tannins and acidity wines.

    Acidity is a virtue and tannins occur after a minor percentage is aged in French oak barrels of 600 liters and another part in earthen jar (clay) of 300 arrobas (5000 liters) for 12 months.

    Variety: TINTO VELASCO, there are no other known synonyms for this variety.

    Aging potential: The time this wine rests in our underground cellars alloews it to get rounded and ready to be enjoyed from the very first day you can get it. From then on, due to its acidity and structure, it can be drunk with pleasure up to 8 years after its harvest. There are not many wines to take reference of their evolution, so we will see what time holds for us after 10 years.

    Tasting notes: Cherry red with middle rim. On the nose it is an uncommon wine, it clearly reminds us of the primary aromas of the grape at the time of harvest, those musts in contact with the skin. There is also a subtle floral memory of violets, some pure cocoa and a marked balsamic sensation, but above all ripe elegant fruit. On the palate it is all black fruits, especially blackberries. The tannins appears mainly to give character in the mouth. The acidity gives persistence and supports  black fruit and floral memories.

    Food Pairing: Look for dishes that do not enhance the bitterness, like  a cream of partridge, foie, blue cheeses and of course manchego cured cheeses. The baby lamb chops, better from La Mancha, and also worth matching the lamb and suckling pig. A wine to enjoy eating, which will enhance the experience for sure.
