THE GRAPEVINES

WINE IS CREATED IN THE VINEYARD

La Mancha is the wine-producing land of Spain par excellence. The land of the estates of Bodegas y Viñedos Verum is rich with magnificent old vine stocks of local varieties -Tempranillo and Airén-, as well as various foreign red and white grape varieties. Every process undertaken at our winery is aimed at preserving to the maximum the variety and terroir expression of each grape.
 
Wine is created in the vineyard. It is grapes that determine the splendor of the wines from Bodegas y Viñedos Verum. These wines come from the land of La Mancha and are elaborated with man’s efforts, its climate and the land. The vineyards owned by the López-Montero family spread across 250 hectares approximately, of which about 45 -distributed in four estates- are destined to the production of the Verum wine range.
 
Casa Ramiro. The sandy-loam soil of this estate grows mainly foreign white grape varieties, such as Chardonnay, Sauvignon Blanc and Gewürztraminer.

Los Arcángeles. This estate mainly cultivates foreign varieties, namely Merlot, Cabernet Sauvignon, Syrah, Cabernet Franc, Sauvignon Blanc, Chardonnay, Petit Verdot and Gewürztraminer.

Las Tinadas. Here mainly indigenous varieties are planted, such as Tempranillo and Airén with traditional cup-shape vine training.

El Romeral. This estate focuses on recovering regional and minority grape varieties.

THE LAND

LA MANCHA IS THE WINE-PRODUCING LAND OF SPAIN
 
It is grapes that determine the splendor of the wines from Bodegas y Viñedos Verum. These wines come from the land of La Mancha and are elaborated with man’s efforts, its climate and the land. The vineyards owned by the López-Montero family spread across 250 hectares approximately, of which about 45 –distributed in four estates- are destined to the production of the Verum wine range.
Tomelloso is located in the Castilian plateau of the Iberian Peninsula, at an altitude of 650 meters. Its climate, with scarce rainfall not exceeding 250 mm per square meter per year and abundant sunshine, together with its calcareous soil, makes it an ideal place to cultivate grapevines. Thanks to these optimal conditions, at Verum we have successfully implemented organic cultivation for all our grape varieties.

This estate focuses on recovering regional, minority grape varieties for a research and development project set up by the Castilla-Castilla La ManchaInstitute of Vine and Wine (IVICAM) with the support of Bodegas y Viñedos Verum.

Las tiñadas

“Sandy-loam soil very calcareous and rich of other minerals”

Located 13 kilometers from Tomelloso, the soil of this estate is extremely stony, strewn with pebbles. This sandy-loam soil is very calcareous and has an abundance of other minerals, including granite, iron and quartz. Here mainly indigenous varieties are planted, such as Tempranillo and Airén with traditional cup-shape vine training. This estate is home to the family’s most ancient vineyards dating back to 1950.

In this estate grows mainly foreign white grape varieties

The sandy-loam soil of this estate grows mainly foreign white grape varieties, such as Chardonnay, Sauvignon Blanc and Gewürztraminer, as well as aromatic, small-berry Muscat grapes. As for red grapes, the land of Casa Ramiro feeds Verum with the French varieties Petit Verdot and Cabernet Franc.

VERUM LA DIVINA OLD VINES AIRÉN 2020

A gastronomy white wine that reflects  the best of our land.

LA DIVINA vineyard is located on the road from Tomelloso to Campo de Calatrava at 695 m above sea level. The AIRÉN vineyard  was planted at the begining of the second half of the 20th Century, an old rainfed vineyard planted by those who dedicated themselves to the vines as a way of life. It can be assured this estate has been ecological since the very begining due to the type of soil and climate conditions.

The biological cycle of the vine in 2020 was excellent from  the flowering, cluster development, veraison and maturation. One of the virtues of old vines is their perfect adaptation to the soil and climate.

The harvest was manual in 15 kg boxes in the last week of September; in the early morning hours, the cluusters went through the selection table and into the tank for a 2 hours pre-fermentation maceration. Subsequently, the must is devatted (without pressing) and racked to another tank for fermentation at low temperature.

After fermentation, the wine is aged for one month in big clay jars and then 8 months in stainless steel tanks in contact with its lees and without stirring until bottling. This wine had a natural clarification according to the minimal intervention approach. Over time, precipitation and cloudiness might appear, which has no effect on the quality of the wine.

Serving temperature: 7º – 9ºC

Tasting notes: VISUALLY, it is pale lemon yellow coloured with golden reflections..In the NOSE, it is intense, memories of White fruit (apple), subtle banana , balsamic herbs, chamomile and fennel anise merge, all together with mineral and white flowers memories.On the PALATE, it is a wine that needs time to be explored and discovered totally. It is unctuous with structure and a great acidity that leads to an aftertaste full of aromatic herbs, mineral hints, aniseed and citrus. Clean and fragrant, it invites you to keep on drinking.

Food and wine pairing: It is its cleanliness and mineral carácter what makes it ideal for Mediterranean gastronomy. We might match it with cold dishes like cordovan salmorejo or ajoblanco, goat cheese salads with raisins or smoked fish. We may also try with some Cantabrian anchovies and tuna mojama. And last but not least, with fish or even shellfish.
